Thai Coconut Banana Dessert

· Food Team
This time we are looking at a traditional Thai dessert known as Kluai Buat Chi. It is a simple yet comforting dish made from coconut milk and bananas, appreciated for its soft texture and naturally gentle sweetness.
We will go step by step through what this dish is, how it tastes, and most importantly, how we can prepare it clearly at home with exact ingredients and easy instructions.
What Kluai Buat Chi Is
Kluai Buat Chi is a comforting dessert made by slowly cooking ripe bananas in coconut milk. The result is a soft, creamy, and lightly sweet dish with a smooth aroma.
We often enjoy it as a light dessert after meals or during quiet moments in daily life. Its charm comes from simplicity, using only a few natural ingredients that blend together beautifully through gentle heat.
Ingredients We Need
To prepare this dessert for about 4 servings, we use the following ingredients:
- 12 ripe bananas (medium size, peeled and cut into halves or quarters)
- 600 ml coconut milk (about 2.5 cups)
- 120 g sugar (adjustable depending on taste preference)
- 1/2 teaspoon salt
- 500 ml water (for initial blanching step)
Each ingredient has a clear role. The bananas provide natural sweetness and soft texture, while coconut milk creates a creamy base. Sugar enhances flavor depth, and salt helps balance the overall taste.
Step 1: Preparing the Bananas
- We start by peeling the bananas carefully and cutting them into halves or quarters depending on size. This helps them cook evenly later.
- Next, we bring 500 ml of water to a gentle boil in a cooking vessel. Once the water is warm and slightly bubbling, we place the banana pieces inside for about 1–2 minutes.
- This short blanching step helps remove any slight bitterness and improves texture. After that, we drain the bananas and set them aside.
Step 2: Heating the Coconut Base
- We pour 600 ml of coconut milk into a clean cooking vessel. We heat it over medium flame, stirring gently to avoid sticking.
- When the coconut milk starts to show light bubbling around the edges, we reduce the heat. This is important because we want a slow simmer, not a strong boil.
- A gentle heat keeps the texture smooth and prevents separation.
Step 3: Cooking the Bananas
- Now we add the prepared banana pieces into the warm coconut milk.
- We let them simmer slowly for about 10–15 minutes. During this time, the bananas become softer and begin absorbing the coconut aroma.
- We stir occasionally, but gently, so the fruit keeps its shape. The mixture gradually becomes slightly thicker and more fragrant.
Step 4: Adding Sweetness and Balance
- After the bananas have softened, we add 120 g of sugar into the cooking vessel. We stir slowly until the sugar fully dissolves.
- Then we add 1/2 teaspoon of salt. This small amount is important because it enhances the sweetness without making the dish too heavy.
- At this stage, we taste and adjust if needed. Some may prefer slightly more sweetness, while others enjoy a lighter flavor.
Step 5: Final Simmer and Texture Check
- We continue to simmer the mixture for another 3–5 minutes on low heat.
- The final texture should be smooth, creamy, and slightly thick. The bananas should be soft but still hold their shape. The coconut milk should feel rich but not heavy.
- Once everything is well combined, we turn off the heat.
How We Serve It
- We can serve Kluai Buat Chi either warm or at room temperature. Both options offer a gentle and pleasant taste experience.
- When served warm, the aroma feels more comforting. When cooled slightly, the texture becomes even smoother and more refreshing.
- It is often enjoyed in small bowls, making it a light and easy dessert after meals.
Kluai Buat Chi shows how simple ingredients can create a soft and memorable dessert experience. With just bananas, coconut milk, sugar, and a little salt, we can make something comforting and naturally sweet.
If we try this recipe at home, we may notice how relaxing the cooking process feels. It is slow, gentle, and rewarding. Sometimes, the simplest dishes bring the most comfort to our daily table.
